Did you know that up until the early 1980s, there was really no alternative to killing calves if you wanted to make hard cheese?

    There was also no alternative to killing calves if you wanted to have a regular supply of milk. There were tradeoffs, but if you let every calf nurse and grow up to become a cow, you’d have way too many cows and you’d be getting less milk for human use. That meant most calves were killed. You might as well eat the veal and use the rennet and anything else worthwhile.
